
Pancakes for picky eaters
Strange title huh? Well. One thing I am learning is that it is true that no 2 kids are alike and mine are as different as they come.

Vegetable puree pancakes
Biggest example is food. My girl loves her food and when she started eating would eat everything I put in front of her. I was not vegetarian at the time, but we kept her on a vegetarian diet for as long as we possibly could and she loved it.
Now there’s a bit of peer pressure from other little people so there’s resistance sometimes. I counter this resistance by ‘gift wrapping’ food.
Example is avocado. She loves it but her friends have decreed it yucky and she now struggles to eat it. What do I do? I simply put it in a smoothee and ta da….. (literally)
My boy on the other simply refuses food even when he is hungry. Of late he simply refuses veggies. Veggies are good for him and it pains me to have to throw away veggies. So today I decided to try something different. I made veggie pancakes. Nothing overly fancy as it would have broken my heart if he had refused the food.
Recipe:
400grams veggies (I used a Woolworths prepack)
Pinch of herbs
Teaspoon of turmeric
Pinch of salt
Cup of flour
Steam the vegetables
Blend together with the spices and salt
Mix in the flour
Fry in very light oil
It doesn’t look wow as it looks green, but it was a hit with my little man. He had been snacking so we didn’t think he would eat but he surprised us.
Lesson learnt: I need to do a bit more with regards to the kids meals. I think having the same things the same way is boring not just for us as adults but the little kids as well.
Oh, I made so many that I had a few myself and they were yummy. I made a sandwich with them as the filling. Yummy!
