
Best chocolate and peanut butter ice cream ever
I must admit, I am my own worst critic. Most of the time I try out new recipes, I never expect things to come out well and I am always very pleasantly surprised when they do.
I had a beautiful glass jar blender which we put to very good use in the summer. Unfortunately as with all things done in a rush, hubby forgot to fasten/attach it (not sure what you call it) properly one morning as he rushed to work. Thinking it was secured, I moved the unit and the jar went crashing down :-(. I was very sad as it had been an expensive buy and was even sadder when I realised that I couldn’t walk into any shop and just buy the jar. I kept the rest of the unit for a while, hoping by some miracle I would be able to get a jar that fit. But alas, it was taking up space and attracting dust so it had to go :-(.
A few months back, broke as I was at the time, I decided it was time to get another blender. I didn’t do as much research on a blender or even on prices as I had with the last one. I simply walked into a shop for milk and came out with a blender as well. It’s not bad, it does the job nicely. And my daughter and I use it frequently for ‘ice cream’.
My mum is in the peanut business and I found myself with raw chopped up peanuts leftover from one of her products. I didn’t know what to do with them as they didn’t taste very nice raw and they were too small to eat as is (in my mind anyway), so I figured the best way to use them would be in food, somehow. So I roasted them to use in this recipe.
My favorite is chocolate and peanut ice cream. I suspect missy T loves anything that comes out of the blender.
Ingredients:
– 1 cup of rice milk
– half a cup of roasted peanuts/groundnuts
– a few spoons of Nestle’s hot chocolate
– 1 spoon herbalife protein drink
Blitz all the ingredients in a blender until the nuts have been crushed.
